3 hardened. The cut melon strips are put into pre-prepared 1% lime water or 0.1% calcium chloride solution, soaked for 8 to 12 hours, and the hardening process is performed. 4 blanching. After the rinsing is completed, the melon strips should be boiled in boiling water for 10 minutes, and the melon strips should be changed from white to dark white and transparent and soft. Then, pick up and put into cold water (preferably running water) to soak for 2 to 4 hours, and then put it into boiling water and blanch for 1 minute so as to warm it. 5 candied fruit. Usually about 80 kg of sugar per 100 kg of melon. Before candied fruit, you should put the melon strips in the jar first, and put in 1/3 of the sugar for the first time. After 2 to 4 hours, leach out the juice and add 80% of the remaining sugar, about 8 to 10 hours. That is, after all the sugar is dissolved, it is poured together with the sugar liquid into a sandwich pot and retort.
6 candied. When cooking, make sure that the bottom of the pan has a large amount of firepower, and be careful to dissolve the remaining sugar with the first drained sugar during the cooking process. Put sugar once every 10 to 15 minutes during cooking, and put it in three separate batches to form a cold and hot state to promote the penetration of sugar until the boiled water evaporates completely, then leaves the fire and continues to stir.
